236.6, 240 or 250?
All three are "a cup". 236.6 mL is the US customary cup, ½ US pint. 240 mL is the rounded "legal cup" used on American nutrition labels. 250 mL is the metric cup of Australia, New Zealand, Canada and South Africa. For most cooking, 240 mL is the sensible number to use on a metric jug.
Who made the cup a precise unit?
Fannie Farmer. Her Boston Cooking-School Cook Book of 1896 insisted on level, standardised cups and spoons at a time when recipes said "a teacup" or "butter the size of an egg". The book sold millions of copies and is the reason American recipes are written in cups to this day.
