How do you follow a European recipe in grams?
The mismatch that catches people is butter. European butter comes in 250 g blocks; American butter comes in 4 oz sticks of 113 g. A European recipe asking for "half a block" wants 125 g — just over one US stick, not two. Converting grams to ounces first, then to sticks, avoids the guesswork: 125 g ÷ 28.35 = 4.4 oz.
Why is a kitchen scale better than converting?
Most digital kitchen scales switch between grams and ounces with one button, and grams are the more precise mode: ounce displays usually round to a tenth or a quarter of an ounce, which is up to 7 g. For yeast, salt and baking powder, weigh in grams even if the rest of the recipe is in ounces.

Because the law requires it. The Fair Packaging and Labeling Act, as amended in 1992, requires most US consumer packages to state their net quantity in both metric and customary units. The ounce on those labels is the avoirdupois ounce, exactly 28.349523125 g according to NIST Handbook 44, the US code for weighing and measuring devices.
